  • Violina Pumpkin (Cucurbita moschata): heirloom cultivar mainly grown around Ferrara, it takes its name from the shape of the fruit, very similar to a violin. Its main characteristic is its elongated yellow-hazelnut fruit, slightly smaller in the center, the skin is wrinkled and has shallow, longitudinal ribs.

    The pumpkins are buttery and  can weight about 4 kg. The pulp is orange has a great flavour which makes it the queen of the kitchen, perfect for tortelli, risotto, gnocchi, soups and creams. It can also be eaten baked, or mixed with other vegetables, accompanied by barley or spelled.

    You can also make cakes, biscuits, and an excellent jam with sugar (300 gr per 1kg of pumpkin), lemon juice and peel, cinnamon and nutmeg.
