Risi Bean (Phaseolus vulgaris): the "Fasuli Risi" is also one of the products with PGI (Protected Geographical Indication) denomination from Sarconi (Basilicata). This bean is completely white, it is particularly important because of its intense taste and creamy consistency, also because its fine skin helps digestibility and shortens cooking times. This variety is amongst the best for cooking, as well as cultivation, in addition to its great taste, the plant is undemanding and very rustic, selected in difficult times and in places with harsh climate conditions. Its name is probably due to its similarity to rice, and to the fact that they are often served as a source of carbohydrates instead of pasta and rice. Outstanding quality.
